Keto Garlic Parmesan Green Beans with Bacon
Green beans is one of those veggies that can be served at just about every holiday because they’re a great side for pretty much any dish. The unfortunate thing about them, is that people get in a rut with how they make them.
Nobody wants green beans from a can. Let’s be honest. Canned green beans suck. Growing up, that’s all I had, though, so I learned to hate them. When Rebecca and I started Keto, I decided to explore them again. A big thanks mostly goes to the Food Network and the chefs there who advocate using fresh ingredients.
I saw Bobby Flay do a quick blanch on some fresh green beans, season them, and serve them with steak. They looked so good, we had to try them.
They were amazing!
After that, we started eating green beans again and trying out different recipes with them.
There’s a local barbecue place that we frequent because they have good keto options, and that place has a garlic Parmesan green bean dish that I fell in love with. So I came home and started working on figuring out the recipe.
This recipe is what I came up with. And I have to tell you…. Rebecca and I both like mine better!
Use fresh green beans; not canned. You can find them easily at almost any place that sells fresh food now. I love how the veggie sections of all the grocery stores are focusing on freshness these days.
I mean, I know I was JUST talking about buying fresh, but I’ve gotten lazy with garlic. That’s mostly because I can’t really tell the difference between fresh garlic and the stuff you buy a jar. I cook with it a lot, so to save time, I end up buying the large jugs of garlic from Amazon.
I make my own, using our recipe. If you don’t have time to do that, though, the store-bought stuff is fine. Just read those labels and make sure to get the Keto friendly kind.
White onions work fine for this, but you can use any kind you like. Red onions will add a touch more tang to the dish while white and yellow onions are a little sweeter. The recipe below uses white onions.
Use the bacon that you like, but I recommend not using thick cut bacon. I like thin cut bacon for this because you’re going to cut the strips into small pieces and crisp them up in a pan. Thin cut bacon crisps a little bit better and a little faster than thick cut bacon.
Carb Free Sweetener
I use Confectioners Monkfruit because that’s what we like.
This is an optional ingredient, but I like to add it to the mayonnaise in this recipe. It doesn’t take much because you don’t want the dish to be sweet.
However, adding a teaspoon of monkfruit to the recipe helps to balance the rich creaminess of the mayonnaise.
Confectioners monkfruit, rather than classic granulated, will allow for a smoother texture when mixed into the mayonnaise.
Monkfruit is a wonderful, Keto-approved sweetener. Since we discovered it, we’ve started using it in everything that needs sweetness.
Monkfruit sweetener stands up well to the heat of baking, it tastes great and doesn’t have a bad aftertaste. It has no carbs, and actually contains a substance that is reported to help stabilize blood glucose levels.
Amazon is the most reasonably priced and convenient place we've found to purchase it.

We use the regular old Kraft shredded Parmesan cheese. I’ve used Parmesan cheese that I’ve actually shaved off of a block of cheese for this recipe, and honestly, it’s not the same. It’s a texture thing. Besides, we’re going for easy here, remember?
Grated Parmesan Cheese seems to find its way into a lot of our baked dishes. It adds some salt, some texture, and a mild, savory note.
Suffice to say, it's become a kitchen staple for us. We use it so much, we buy the large containers of it to save money.
Amazon Prime pantry makes it crazy easy to get because someone just brings it to you. Who wants to go shopping when you can just get it in the mail?!
The only real note I have for you is about giving the green beans an ice bath after you blanch them (or boil them breifly).
I typically only boil the green beans for a couple minutes. That’s enough time to make them turn a nice shade of green and soften them up a bit.
They will still have a slight crunch when you bite into them. I do this because I don’t like mushy green beans.
If you boil green beans too long, they turn mushy.
And if you only boil them for a couple minutes, the carry over heat will cause the green beans to cook a little more, but I don’t think an ice bath is necessary to get them to stop cooking.
If you feel like your green beans need an ice bath, then that’s totally up to you.

Keto Garlic Parmesan Green Beans with Bacon
This green bean dish is easy and yummy. It'll go along side any main dish you throw at it.
Dice the bacon and get it into a skillet to start cooking. Get the pieces as crispy as you'd like, then remove them to a paper towel to soak up some of the fat.
Bring a medium-sized pot of water to a low boil. Make sure it's big enough to hold the green beans and cover them with water when you're ready to put them in.
Dice the onion and sweat it in a pan with a little olive oil over medium high heat. Remove the onions when they start to become translucent.
In a large mixing bowl, thoroughly combine the mayonnaise, Parmesan cheese, onion, garlic and salt.
Put the green beans into the pot of boiling water. Cook time depends on your preference here: 2 minutes will leave them with a little crunch. 3 minutes will soften them a bit more. 4 minutes will over cook them.
NOTE: An ice bath is optional here. When I cook the green beans for 2 minutes, I never need the ice bath.
Remove your green beans from the boiling water and add them to the mayonnaise mixture. Toss to coat.
Add your green beans to a serving bowl or put them straight onto the plate.
Garnish the top with your nice, crispy bacon (if you didn't snack on all of it while you were wrapping up the recipe).
Macros are calculated using our homemade mayonnaise. They may change a bit depending on the mayo you use, but they should still be pretty close.
