Sausage Stuffed Mushroom Recipe

There are something like a bazillion Stuffed Mushroom recipes on the internet. Actually, I stopped counting after a few dozen.

That just means this is a particularly versatile dish that can carry any personality you give it.

I take a little different approach from most recipes, though. This post will give you a few ideas how you can throw a flavor curve ball into such a well-known recipe and keep it Low Carb / Keto.




Some Notes About the Ingredients

Sausage

It can be a challenge to find sausage that is doesn’t contain corn syrup, brown sugar, maltodextrin or some other type of sweetener in it.

When we don’t make our sausage ourselves (click here for our DIY Keto breakfast sausage recipe), we get it from Porter Road right here in Nashville.

Cheese

We eat a good bit of cheese on Keto because it’s low carb and high fat.

BUT….

Some cheeses contain a small amount of lactose, which is milk sugar. We don’t typically think it’s a big deal as long as you track your macros.

Stay away from the pre-shredded stuff. They often put corn starch or other addatives in pre-shredded cheeses to keep them from clumping in the bag.

Also, to some people, dairy can some a bit inflamatory. Keto is all about being anti inflamitory, so eating cheese may be counter productive if you fall into that category.

It’s important to know your body and to know what works (and what doesn’t).

For us, cheese in moderation is ok. And it’s fantastic in this recipe.




Mushrooms

Mushrooms are game on for Keto! 

They are low carb, low calorie and high in nutrition. 

You don’t need the expensive kind for this recipe. I’ve used plain old white, button mushrooms for this and they turned out wonderfully.

Stuffed Mushrooms – An All Occasion Dish

I love those recipes that offer a lot of versatility in flavor and cooking styles while maintaining a high level of forgiveness against something going wrong.

Sausage Stuffed Mushrooms is all of that!

It seems like one of those froufrou appetizers that you may expect to pay top dollar for in a snooty restaurant, only to receive an odd number of them on a smallish, saucer-like plate. I mean, why do appetizers come in odd numbers? When do you ever go to dinner with 3 or 5 people? Is there some marketing technique I’m not aware of that states it’s a good thing when your guests fight over who gets the last one of a thing?

Am I right?!

I digress….




This recipe offers diversity because it has so few ingredients.

I know that seems counterintuitive but stay with me.

By changing one or two ingredients around, there’s a bigger impact on the finished product.

You can create a whole different flavor profile without messing up the balance of the dish.

Stuffed mushrooms also do well under multiple cooking techniques; smoking, baking, braising, frying or even steaming.

The recipe I’m including below is my favorite way to have them, but I’ll throw out a few ideas here and encourage you to experiment.

The Basics of the Dish

The ingredients are simple: mushrooms, sausage, cheese, herbs and spices. Playing around with those is where you will get such a wide range of flavor styles.

For example: If you use chorizo for the sausage, queso fresco for your cheese and toss in some cilantro, then you have a whole ‘South of the Border” thing going on. They can be served on Taco Tuesday right alongside your favorite keto tortilla-wrapped main course (or your Keto-friendly taco salad, sans carbs, if you prefer).

On the other hand: Try bringing the Spicy Italian Sausage off the bench and pair it with some shredded fresh mozzarella. Add in a pinch of garlic and some oregano and you have a side dish fit for Italian night. As a bonus note for this one; braise your stuffed mushrooms in your favorite tomato-based sauce (we have a recipe for that here!) and your family will be telling you “ti amo” before their forks hit the plate. (According to Google, that means “I love you” in Italian… we checked)

More Potential Combos

Here are a few additional cheese/sausage pairings you may try in this sausage stuffed mushroom recipe. The beauty of this recipe is the ability to tailor it and still get a great-tasting result)

  • Sharp cheddar and spicy breakfast sausage – Serve with any good ol’ Southern meal.
  • Brie and maple flavored breakfast sausage – for added filler, try mincing in a few slices of green apple – Great as a brunch appetizer.
  • Irish Cheddar and Irish Sausage – braise the mushrooms in Kerry Gold butter for an Emerald Aisle treat that’s perfect for St. Patrick’s Day
  • American cheese and Boudin Sausage – add in some Cajun cauliflower rice and braise your mushrooms in a bourbon and butter sauce to have yourself a little taste of New Orleans.

What’d I tell you? Versatility! I wonder what other combinations you may be able to come up with for these?

While the recipe below is one of my favorite ways to make these, don’t let yourself be limited. I love smoked food, so I make my sausage stuffed mushrooms in my smoker, but they are amazing in the oven. You can use the same temperature and cook time that I noted in the recipe if you decide to go that route.

It makes smoking meats easy, and gets hot enough to grill as well. It's been well worth every penny for us.

Sausage Stuffed Mushrooms

Mushrooms, stuffed with sausage and cheese, then smoked (or baked) to spicy perfection.

Ingredients

Instructions

  1. Prepare your smoker with your hard wood of choice - heat to 225 degrees F.

  2. Remove stems from mushrooms and set aside

  3. Wash mushrooms and clean out vents with a spoon, being careful not to damage the sides of the mushrooms. No need to be too thorough here; just get most of the vents out.

  4. Pat mushrooms dry and lightly brush them with olive oil. NOTE: Don't toss them in the oil because they will soak up too much of it. Brushing them is best.

  5. Sprinkle mushrooms with kosher salt to taste.

  6. Dice the mushrooms stems you reserved

  7. Shred the Gouda if not already shredded

  8. Add diced stems, Gouda and sausage to bowl and combine. Don't work the mixture too much or it will become gummy.

  9. Portion the sausage mixture into roughly 2 ounce balls and stuff them into the mushrooms, being sure to distribute the mixture as it makes sense (some mushrooms will be a bit larger than others, so will hold more stuffing)

  10. Place stuffed mushrooms onto a baking sheet or similar vessel and place in smoker for 35-40 minutes, until internal temperature is 145. NOTE: These do well in an iron skillet which makes it easy to add a braising liquid if you choose
